Strawberry Margarita Jello Shooters

           
For my friend's 22nd birthday, I tried making these cute strawberry margarita jello shooters using the recipe I adapted from Bakers Royale. They are a little time consuming to make and the coring of the strawberry requires a bit of skill--I only had about a 50% efficiency rate. But in the end, the ones that survived turned out to be a big hit!

Ingredients
30 large strawberries
1 small box (3 oz) strawberry flavored jello
1 cup tequila
1 cup water
Lime and coarse sugar for garnish

Directions
1. Wash the strawberries and gently dry them with a paper towel.
2. Cut off the bottom of the pointy end of the strawberry. This will help the strawberry stand upright. Only cut a little bit off so that there is no hole on the bottom.
3. Cut off the leaf of the strawberry. Using a paring knife or spoon, hollow out the strawberry. I found that it was easiest using a knife to carve a circle and then use the spoon to core it. Be careful not to make holes in the strawberry as the tiniest hole will make all the jello spill out (this was what I struggled with).
4. Boil the water in a large saucepan on high heat. Remove from heat and add the jello powder and whisk until completely dissolved, about 2 minutes. Add in the tequila and stir to combine.
5. Pour mixture into hollowed strawberries and chill overnight.
6. Rim the strawberry with coarse sugar and garnish with a small lime triangle. Serve the strawberry shooters chilled.
